Tirol Milch Grey Cheese is a sour milk cheese that has been a key component in rural culinary tradition for several centuries. When young, it has a curd-like, crumbly consistency, but with increasing age a greyish, "greasy" layer forms on the outside. Hence the name. The ripening period for grey cheese lasts approx. 10-14 days. Grey cheese is 99% fat-free, making it an ideal fasting or dietary food.
